Yvette's Curried Prawns

    Serves: 6 

    • 1 kg prawns (peeled)
    • 125g butter
    • 1 tblspn curry powder
    • 2 sticks celery, finely chopped
    • 1 large onion, finely diced
    • 1 clove garlic, crushed
    • 1/2 red capsicum finely diced
    • 1 medium tomato, peeled and finely diced
    • 4 tblspns flour
    • 1/2 cup water
    • 1 1/2 cup milk
    • 2 chicken stock cubes , crumbled
    • 1 tspn sugar
    • 1 tblspn lemon juice
    • salt and pepper to taste

    Preparation:15min  ›  Cook:40min  ›  Ready in:55min 

    1. Melt butter in frying pan and add curry powder, celery, onion, garlic and red capsicum. Saute 2 to 3 minutes.
    2. Add tomato to frying pan and cook a further 2 minutes.
    3. Stir in flour, salt and pepper and cook 1 minute.
    4. Gradually add combined water, milk and stock cubes. Continually stirring till sauce boils and thickens. Reduce to simmer.
    5. Add sugar and lemon juice and cook for 20 to 25 minutes, stirring occasionally.
    6. Add prawns and allow to just heat through.
    7. Serve on a bed of rice.

    this is a lovely dish and reminds me of the kind of curry you get from a Chinese restaurant. We all loved it and even my non curry loving friend who happened to drop by while I was making it enjoyed it. I kept to the recipe but added some frozen peas which went well.
