Quick and Easy Thai Green Chicken Curry

    This is a quick, yet delicious Thai green curry for anyone really! Even the kids love it!

    Serves: 6 

    • 2 chicken breasts
    • 1-2 onions
    • 1 tblspn crushed garlic
    • 2 tblspn green curry paste
    • 1/2 Cup white wine
    • 2 potatoes - cubed
    • 1-1 1/2 Cups water
    • 1 Cup coconut milk
    • any other vegtables you like. For example, bamboo shoots, water chestnuts, etc.
    • butter for cooking, as needed

    Preparation:30min  ›  Cook:20min  ›  Ready in:50min 

    1. Using a small amount of butter, brown chicken and set aside.
    2. Using a small amount of butter, cook onions, garlic and green curry paste.
    3. Halve potatoes and steam in microwave until partially cooked.
    4. Add white wine to onion mix, as well as the steamed potatoes. Add water until the potatoes are covered.
    5. Allow to simmer until the potatoes are cooked.
    6. Add coconut milk and mix in the cooked chicken.
    7. Add whatever vegetables you like at the end. For example, bamboo shoots or water chestnuts or mung bean sprouts.


    Serve with steamed rice! Kids also liked it with some pasta shells as a left over the next night.

    Very easy to make. I did change a couple of the ingredients (e.g. didn't have white wine in the cupboard so used stock instead), but still produced a lovely result. I also served over couscous instead of rice.  -  06 Nov 2010

    Very easy and good. I added some red pepper, fresh Thai basil and a jalapeno because we like it a bit more spicy.  -  08 May 2013
