Greek Zucchini Balls (Kolokythokeftedes)

    A very easy recipe for deep fried zucchini balls as an entree.

    Serves: 2 

    • 1 zucchini, grated
    • 1 onion, grated
    • 1/2 carrot, grated
    • 1 clove garlic, minced
    • 1/2 celery root (celeriac), peeled and grated
    • 3/4 tablespoon aniseed, crushed
    • 1/2 tablespoon celery seed
    • 1 teaspoon salt
    • 1 pinch ground black pepper
    • 1/2 cup (65g) plain flour, or as needed
    • 1L oil for frying

    1. Mix zucchini, onion, carrot, garlic, celery root, aniseed, celery seed, salt and pepper together in a bowl. Gradually stir in flour until you have a soft, wet dough that sticks to your hands.
    2. Heat oil in deep-fryer to 190 degrees C. Drop dough by tablespoons into the fryer and fry on both sides until lightly browned.

    I used celery instead of celeriac, and sorghum flour instead of ap flour. I probably would have enjoyed these more if I had let the vegetables soak with the salt to release the natural liquid for about 30 minutes before adding the flour. I dry fried these like they were pancakes. Somehow, I was hoping there would be more flavor!
