A tasty main dish of chicken breasts stuffed with feta cheese and spinach then wrapped in streaky bacon. Baked to perfection for about an hour, this chicken is morish.

Serves: 4 

  • 4 chicken breasts, boneless and skinless
  • 1/2 cup mayonnaise
  • 1/2 cup (60g) crumbled feta cheese
  • 2 cloves garlic, diced
  • 250g frozen chopped spinach, thawed, drained and diced
  • 4 rashers bacon

Preparation:30min  ›  Cook:1hour  ›  Ready in:1hour30min 

  1. Preheat oven to 190 degrees C.
  2. In a medium bowl, mix mayonnaise, spinach, feta cheese and garlic until well blended. Set aside.
  3. Carefully butterfly chicken breasts, making sure not to cut all the way through. Spoon spinach mixture into chicken breasts. Wrap each with a piece of bacon then secure with a toothpick. Place in shallow baking dish. Cover then bake until chicken is no longer pink, about 1 hour.
