Red Capsicum Soup with Feta

A quick and easy soup that looks great and tastes delicious! The wonderful colour and mild flavour make it an excellent first course! Reheats nicely in the microwave if you need to prepare a day in advance!


Serves: 4 

  • 1 (350g) jar roasted red capsicums
  • 400ml salt-reduced chicken stock
  • 1 teaspoon minced garlic
  • 3/4 teaspoon dried oregano
  • pinch dried basil
  • 1 cup (250ml) thickened cream
  • 1/2 cup (60g) crumbled feta cheese

Preparation:10min  ›  Cook:15min  ›  Ready in:25min 

  1. In a food processor or blender process undrained capsicum with chicken stock, garlic, oregano and basil until smooth.
  2. Transfer liquid to a saucepan and heat over medium-low heat. Simmer for 5 minutes. Slowly whisk in cream and heat through.
  3. Serve in soup bowls over crumbled feta. Sprinkle additional feta and oregano on top for garnish.
