Surprise your guests with this colourful dish. It's a great side for a Moroccan meal. Chopped apricots add a bit of sweetness to what is sure to become a favourite for special occasions.


Serves: 6 

  • 1/2 cup (85g) uncooked white rice
  • 1 3/4 cups (440ml) water, divided
  • 65g butter
  • 1 cup (140g) chopped onions
  • 6 cups (820g) peeled, seeded and diced pumpkin
  • 1 cup (115g) chopped dried apricots
  • 1 teaspoon salt

  1. In a saucepan bring 1 cup (250ml) water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.
  2. In a medium saucepan over medium heat, melt the butter and stir in the onions. Slowly cook and stir onions until soft. Mix in the pumpkin, apricots, salt and 3/4 cup (190ml) water. Cook 20 minutes.
  3. Mix rice into the pumpkin mixture. Continue cooking for 10 minutes or until pumpkin is tender.
