This is a Jamaican technique of cooking chicken after marinating it in "jerk" spices, which is to say ginger, chilli, orange, cloves, cinnamon and more.

Ingredients

Serves: 3
  • 1 spring onion, finely chopped
  • 4 tablespoons orange juice
  • 1 tablespoon finely grated fresh ginger
  • 1 tablespoon finely chopped green chilli
  • 1 tablespoon lime juice
  • 1 tablespoon soy sauce
  • 1 clove garlic, crushed
  • 1 teaspoon ground allspice
  • 1/4 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1 whole chicken, cut into pieces

Preparation method

Prep: 10 minutes | Cook: 30 minutes | Extra time: 8 hours, marinating
1.
Combine spring onions, orange juice, ginger, chilli, lime juice, soy sauce, garlic, allspice, cinnamon and cloves. Add chicken, and marinate for 8 hours.
2.
Preheat barbecue for medium heat. Cook chicken until juices run clear, and drizzle with leftover marinade that has been boiled for 2 to 3 minutes.

This was awesome, I will definitely make it again. I mixed the marinade on Sunday and stuck it in the fridge, then Monday morning added it to the chicken, then come dinner time, it was quick and easy to throw it on the bbq.

This is just the best chicken recipe I have tried! Yum,Yum,Yum,Yummmmmmmm,YUM. Watch the chilli though,as you can add as much or as little as you like.

great recipe... and the only one to use a whole chicken cut into pieces. real jerk chicken is not supposed to be boneless and skinless. this was great... not too spicy...
