Orange, Mango and Ginger Sorbet

This delicious and refreshing sorbet is made using an ice-cream maker.


Serves: 8 

  • 1 1/2 cups (375ml) water
  • 1 1/2 cups (330g) white sugar
  • 1 (5 cm) piece fresh ginger, peeled and thinly sliced
  • 1 pinch sea salt
  • 1 teaspoon lime rind
  • 2 cups (500ml) orange juice
  • 1 cup (250ml) mango juice
  • 1/3 cup (85ml) lemon juice

  1. Combine the water, sugar, ginger, salt and lime rind in a saucepan; bring to a boil. Reduce heat to low and simmer 5 minutes. Allow mixture to cool; strain. Stir in the orange juice, mango juice, and lemon juice. Cover and chill 3 hours.
  2. Fill an ice cream maker with the mixture, and freeze according to the manufacturer's instructions.
