A delicious change of taste in muffins. The orange taste makes this recipe very flavourful.


Makes: 12 muffins

  • 1 3/4 cups (220g) plain flour
  • 3 teaspoons (10g) baking powder
  • 3/4 teaspoon salt
  • 1/4 cup (55g) white sugar
  • 1 egg, beaten
  • finely grated rind of 1 orange
  • 1/4 cup (65ml) orange juice
  • 1/2 cup (125ml) milk
  • 1/3 cup (85ml) vegetable oil
  • 3/4 cup (115g) sultanas

  1. Preheat oven to 200 degrees C. Grease muffin cups or line with patty cups.
  2. In a large bowl, sift together flour, baking powder, salt and sugar. In a separate bowl, combine egg, orange rind, orange juice, milk and vegetable oil. Stir egg mixture into flour mixture just until moistened; fold in sultanas. Spoon batter into prepared muffin cups.
  3. Bake in preheated oven for 20 to 25 minutes, until a toothpick inserted into centre of a muffin comes out clean.

OK recipe, next time I'll add more orange as it was very weak. Needs some work. - 20 Apr 2010
