    A traditional orange muffin recipe best served hot.

    Ingredients
    Makes: 12 muffins

    • 2 cups (250g) plain flour
    • 2 teaspoons baking powder
    • 1/4 teaspoon bicarb soda
    • 1 teaspoon salt
    • 1/2 cup (110g) white sugar
    • 1 tablespoon grated orange rind
    • 2/3 cup (170ml) orange juice
    • 125g melted butter
    • 2 eggs
    • 1/2 cup (60g) ground walnuts
    • 20g melted butter
    • 1/4 cup packed (40g) brown sugar
    • 1/2 teaspoon ground cinnamon

    Directions
    Preparation:15min  ›  Cook:25min  ›  Ready in:40min 

    1. Combine flour, baking powder, bicarb soda, salt, white sugar and grated orange peel. Stir in orange juice, 125g melted butter, eggs and chopped nuts.
    2. Pour into 12 muffin cups.
    3. Blend 20g melted butter or margarine, 1/4 cup (40g) brown sugar, 1/2 teaspoon cinnamon and sprinkle on top of each muffin. Bake in a preheated 180 degrees C oven for 20-25 minutes. Serve hot.

    Fabulous Recipe!!! This is a fool proof recipe, which for me was a good thing!! By mistake, I added 1/2 lb.of melted butter instead of 1/2 a cup, and over a cup of O.J., I only had to bake them longer and they still turned out great...verry moist. I also added 1 cup or dried cranberries, and didn't add the nuts. This is a very versatile and forgiving recipe that you can make many variations with and it will still turn out great!!     The muffins were excellent if you like your muffins less sweet. I added about a cup of fresh chopped cranberries which went very nicely with the orange.
