Tofu Banana Bread in the Microwave

    A great healthy snack with just four ingredients - tofu, bananas, chocolate chips and pancake mix. Ready in minutes!

    Ingredients
    Serves: 2 

    • 375g silken tofu
    • 2 ripe bananas
    • 2 tablespoons miniature chocolate chips
    • 1 cup (125g) pancake mix

    Directions
    Preparation:10min  ›  Cook:4min  ›  Ready in:14min 

    1. Place the tofu, bananas and 1 tablespoon of chocolate chips in the bowl of a food processor; blend on low to combine ingredients.
    2. Mix together the pancake mix and the remaining 1 tablespoon of chocolate chips in a bowl. Stir in the banana mixture and blend until smooth. Spoon the mixture into the bottom of a microwave-safe baking pan spreading to 4cm thickness.
    3. Cover and cook in the microwave at full power for 4 minutes. Remove and invert onto a microwave-safe plate. If the cake is too moist cook in the microwave 1 to 3 minutes more.

    This smelled better than it tasted, although for coming out of the microwave I'm not sure you could expect anything else. The texture was a little rubbery, and I left it in the microwave for 4 minutes. The insides were very moist but not raw.     The bread is really easy to make and moist. I microwaved it for 4 minutes total in a round pyrex dish and the center is a little gooey while the rest was perfect.  -  20 Aug 2007  (Review from Allrecipes USA and Canada)

    It has potential, I would probably make it again, but I would use a larger dish. I used a loaf pan, and probably cooked it for over 10 min. I wouldd also try baking it in the oven.
