    I love this recipe! There are heaps of vegetables like zucchini, mushrooms and capsicum, and then there is the cream cheese and cheddar.

    Serves: 8 

    • 3 tablespoons vegetable oil
    • 1 1/2 cups diced zucchini
    • 1 1/2 cups diced fresh mushrooms
    • 3/4 cup diced onion
    • 3/4 cup diced green capsicum
    • 1 clove garlic, crushed
    • 6 eggs, whisked
    • 1/4 cup (60ml) full cream milk
    • 500g cream cheese, diced
    • 2 cups (250g) grated cheddar cheese
    • 4 slices wholemeal bread, cubed
    • salt and pepper, to taste

    1. Preheat oven to 180 degrees C. Lightly grease a 20 x 30cm baking tray.
    2. In a large frying pan heat oil over medium high heat. Add zucchini, mushrooms, onion, capsicum and garlic; sauté until tender. Remove from heat and let cool slightly.
    3. In a large bowl whisk together the eggs and milk. Stir in cream cheese, cheddar cheese, bread cubes and sautéed vegetables. Season with salt and pepper. Mix well and pour into prepared baking tray.
    4. Bake in preheated oven for one hour or until centre is set. Serve hot or cold.
