    Stewed apples make these muffins tender and sweet without impacting the great chocolate flavour.

    Ingredients
    Serves: 12 

    • 1/2 cup apple sauce
    • 1/4 cup (60g) butter, softened
    • 1/2 cup (125g) white sugar
    • 1/2 cup (125g) brown sugar
    • 1 egg
    • 1/2 teaspoon vanilla essence
    • 1 cup (250g) plain flour
    • 1/4 cup (30g) cocoa powder
    • 1/2 teaspoon bicarb soda
    • 1/4 teaspoon ground cinnamon
    • 1 cup (185g) dark cooking chocolate chips
    • 2 tablespoons icing sugar

    Directions

    1. Preheat oven to 180 degrees C. Line muffin tray (cups ~6cm in diameter) with paper patty cups/muffin cases.
    2. In large mixing bowl mix the butter, sugar, brown sugar, egg and vanilla until well combined. Add apple sauce then blend well.
    3. In a separate bowl stir together flour, cocoa, bi carb soda and cinnamon, if desired. Add to butter mixture mixing well. Stir in chocolate chips. Fill muffin cups 3/4 full with batter.
    4. Bake at 180 degrees C for 22 to 26 minutes or until a skewer inserted in centre comes out almost clean. Cool slightly in pan on wire rack. Sprinkle muffin tops with icing sugar, if desired. Serve warm.

    Altered ingredient amounts. Equal amounts of Sugar and Flour just seemed too much for me, so I only used the 1/2 cup of Brown Sugar and they were still a little too sweet for me, but that might be because there were just too many Choc Chips. I also added one mashed Banana. I creamed the Egg and Sugar, then beat in the Butter and mixed in the rest of wet ingredients. Made them light and fluffy. - 31 Oct 2010

    I liked this recipe because it is relatively low in fat. It had too much sugar though, so I only used the Brown Sugar, left the white sugar out. I also added a mashed Banana, and they were very tasty. There were too many Choc Chips, so next time I'll make them with only 1/2 cup of Choc Chips. This is a good healthy recipe. The Apple and Banana made them lovely and moist. Didn't bother with the Icing Sugar. The kids loved making and eating them! - 31 Oct 2010
