Easy Pot Roast made in the slow cooker. Exchange the vegetables for variety based on seasonal availability, turnips and parsnip make a great change.

Serves: 6
  • 1.5kg roasting beef
  • 6 potatoes
  • 1 1/2 cups baby carrots
  • 1 onion
  • 2 celery stalks
  • 1 beef stock cube
  • 2 cups (500ml) water

Preparation method

Prep: 10 minutes | Cook: 6 hours
1.
Cut up potatoes, onions and celery in to fairly large chunks and place in a slow cooker along with the carrots. Put roast on top of vegetables.
2.
Place the the stock cube on top of roast and pour in water.
3.
Cover and cook on low for 6 to 8 hours or high for 4 to 5 hours.
