Slow Cooker Pot Roast

    Easy Pot Roast made in the slow cooker. Exchange the vegetables for variety based on seasonal availability, turnips and parsnip make a great change.

    Ingredients
    Serves: 6 

    • 1.5kg roasting beef
    • 6 potatoes
    • 1 1/2 cups baby carrots
    • 1 onion
    • 2 celery stalks
    • 1 beef stock cube
    • 2 cups (500ml) water

    Directions
    Preparation:10min  ›  Cook:6hours  ›  Ready in:6hours10min 

    1. Cut up potatoes, onions and celery in to fairly large chunks and place in a slow cooker along with the carrots. Put roast on top of vegetables.
    2. Place the the stock cube on top of roast and pour in water.
    3. Cover and cook on low for 6 to 8 hours or high for 4 to 5 hours.

    I used this recipe for my first roast and have used it religiously since. My only advice would be to watch your cooking time. My roasts have always been done between 5-6 hours (on low) and they come out very tender. Overall, a very easy and tasteful recipe.  -  13 Jun 2006  (Review from Allrecipes USA and Canada)
