    Who thought garlic could taste so good? This is a rich, smooth soup can be enjoyed with some good quality bread.

    Serves: 5 

    • 3 garlic bulbs, divided and peeled
    • 3 tablespoons olive oil
    • 2 1/2 cups (625ml) chicken stock
    • 1 cup (250ml) white wine
    • 2 1/2 cups (625ml) milk
    • 1 cup (250ml) thickened cream
    • 1 potato, peeled and cubed
    • 1 pinch salt and pepper, to taste

    1. Chop garlic in a food processor to a coarse paste stopping occasionally to scrape the sides of the bowl.
    2. Heat oil in a large saucepan over low heat. Add the garlic paste and cook just until the paste begins to colour; stirring constantly. Stir in the chicken stock and wine. Bring mixture to a boil.
    3. Reduce heat and simmer for 30 minutes. Stir in the milk, cream and potato then simmer for another 30 minutes.
    4. Puree soup in blender then return to saucepan and simmer. Add salt and pepper to taste. Ladle into bowls and serve with buttered French bread.
