Microwave Chickpeas and Tomatoes

    An easy to make dish of chickpeas in a curry tomato sauce that is cooked in the microwave. Serve with plain rice or noodles. If you're using canned chickpeas (like we do) make sure you drain and rinse them before adding them. Play with other spices too if you'd like.

    • 1 tin (400g) chick peas, rinsed and drained
    • 1 tin (400g) crushed tomatoes
    • 4 teaspoons curry powder
    • 1 1/2 teaspoons garlic powder
    • 1 pinch salt, to taste

    Preparation:5min  ›  Cook:5min  ›  Ready in:10min 

    1. In a microwave-safe dish, mix together the chick peas, crushed tomatoes, curry powder and garlic. Cook in microwave on High for 5 minutes or until hot.

    I make a variation of this recipe all the time - saute garlic and onion in EVOO, add a can of chickpeas and a can of tomatoes. Throw in some curry powder, red pepper and whatever else (turmeric, ginger, garam masala).... Delish  -  13 Oct 2008  (Review from Allrecipes USA and Canada)
