Cooked chicken is microwaved with tomatoes, onions, butter beans, corn and okra in this quick and easy stew. Perfect for leftovers.


Serves: 6 

  • 1.25kg chopped, cooked chicken
  • 2 cups (500ml) water
  • 1 teaspoon ground black pepper
  • 1/2 teaspoon salt
  • 4 tomatoes, sliced
  • 1 large onion, diced
  • 1 packet (500g) frozen butter beans, thawed
  • 1 packet (500g) frozen corn kernels, thawed
  • 1 packet (500g) frozen okra, thawed
  • 1 bay leaf

  1. In a large microwave-safe bowl combine chicken, water, pepper and salt.
  2. Microwave on high 15 minutes. Stir in tomatoes, onions, butter beans, corn, okra and bay leaf. Microwave 7 minutes. Remove bay leaf and microwave 15 minutes more stirring occasionally until tender.

You can substitute tinned butter beans and fresh okra in this recipe
