This is a quick and easy recipe for a cheesy chicken quiche that uses poached chicken but can also use leftover chicken.


Serves: 6 

  • 1 (23cm) premade pie shell
  • 1 poached skinless, boneless chicken breast half, cut into small chunks
  • 1 cup (155g) grated Gruyere cheese
  • 1 cup (125g) grated Parmesan cheese
  • 4 eggs
  • 2 cups (500ml) skim milk
  • 1 (35g) packet dry onion soup mix
  • 1 teaspoon paprika

  1. Preheat oven to 220 degrees C.
  2. Put the pie shell into a 23cm deep dish pie plate or quiche dish or tin. Arrange chicken evenly over the base. Cover with Gruyere cheese.
  3. In a small bowl, beat eggs with a fork; stir in milk, onion soup mix and Parmesan. Pour mixture into pie shell and sprinkle with paprika to taste.
  4. Bake in the preheated oven for 15 minutes, then lower heat to 180 degrees C and bake for 30 more minutes. Let cool for 10 minutes and serve.
