Microwave Cornbread

    This is a simple cornbread that takes five minutes from beginning to end thanks to it being cooked in the microwave. Perfect as a side to a rushed midweek meal.

    Serves: 6 

    • 1/2 cup plain flour
    • 1/2 cup instant polenta
    • 2 tablespoons white sugar
    • 2 teaspoons baking powder
    • 1/4 teaspoon salt
    • 1 egg
    • 1/2 cup milk
    • 2 tablespoons vegetable oil

    Preparation:2min  ›  Cook:3min  ›  Ready in:5min 

    1. Mix the flour, polenta, sugar, baking powder, salt, egg, milk and vegetable oil in a microwave-safe glass or ceramic bowl.
    2. Heat in the microwave on high, until a toothpick inserted into the centre comes out clean, about 3 minutes, rotating the bowl halfway through cooking if your microwave does not have a rotating tray.

    I'd never heard of cornbread done in the microwave before so took a chance. Cut the sugar in half and it took a total of six minutes to cook.  -  10 Jun 2010
