A quick and easy crab or tuna lunch or an impressive starter for a dinner party, also great for lunchbox. Use up salad leftovers + pantry items.

Makes: 2 

  • 1 (200g) tin of crabmeat, salmon, tuna of your choice
  • 1/3 lettuce of choice torn into peices
  • 8 cherry tomatoes - chop in halves
  • 1/2 small cucumber - chopped
  • 2 tablespoon mayonnaise
  • 1 tablespoon tomato sauce
  • 1/2 tsp chilli (or 1 tsp sweet chilli sauce)
  • 2 tbs crispy noodles for garnish - optional

Preparation:10min  ›  Ready in:10min 

  1. Place lettuce in 2 bowls, add tomatoes, cucumber.
  2. With a fork loosen the crab / tuna / salmon and place over the salad.
  3. To make the 'seafood sauce' - Mix mayo, tomato sauce and chilli sauce + drizzle over crab / tuna salad.
  4. Garnish with crispy noodles.


• You can use any other salad ingredients you have. • A small amount of leftover cous-cous or rice makes this a substantial lunch. • use other pantry items, tin water chestnuts, raisins, tin asparagus


If serving as a lunch box meal - put sauce in a separate small container + supply a small 'pull ring' tin of tuna.


Have a jar of the seafood sauce made ahead and store in fridge.
