Em's Chicken

    Whenever I have a craving for KFC chicken I make this. I worked there as a kid and this is a lovely family quick recipe that is a healthier version.... Sounds bizarre but tastes good!

    Serves: 4 

    • chicken thighs - 1-2 per person depending on size
    • 2 cups cornflakes
    • 1 cup grated cheese
    • 1 tin of tomatoes or equivalent of fresh
    • parsley or chives, preferably fresh
    • extra cheese for garnish
    • 1 egg
    • Pepper

    1. Crush the cornflakes with a rolling pin in a plastic bag. Place in a bowl with grated cheese. Add chives or parsley then mix to a consistency.
    2. Beat the egg and place in a bowl.
    3. Place a fork in each thigh then dip each one into the egg and then coat in the cornflake mixture. Be sure to entirely coat. Place on a plate suitable for the microwave. Repeat with each piece of chicken using 1-2 plates.
    4. Microwave for 5 minutes. Leave for 1 minutes then microwave for 4 minutes.
    5. Take out of microwave and garnish for top of each thigh with either some sliced fresh tomato or some tinned tomato. Top with a small sprinkle of cheese and some pepper. Microwave for a final 1-2 minutes to melt cheese.


    I'd love to use breast chicken for a healthier option but it doesn't provide the moisture in the chicken.


    I originally got this recipe and tweaked it a LOT. It involved Parmesan in the original and I don't like parmesan so changed it!
