This is my husbands very favourite recipe. I have been making it for years. It's hot and quite simple to make.

Nutmeg Victoria, Australia

Serves: 4

  • 1 tablespoon brown sugar
  • 2 teaspoons ground ginger
  • 2 teaspoons ground white pepper
  • 2 teaspoons dry mustard
  • 1 teaspoon salt
  • 1 teaspoon curry powder
  • 4 chicken breasts
  • 30g melted butter
  • 200g cup mushrooms
  • 3 tablespoons tomato sauce
  • 2 tablespoons chutney
  • 2 tablespoons worcestershire sauce
  • 1 tablespoon soy sauce
  • fresh fettuccine
  • 4 tomatoes cut into wedges

Preparation:15min  ›  Cook:25min  ›  Extra time:1hour marinating  ›  Ready in:1hour40min

  1. In a plastic bag combine all dry ingredients and mix well. Cut each chicken breast into 4 or 5 pieces and place in the bag one at a time and shake bag to coat evenly. Put into shallow baking dish and stand to marinate for 1 hour.
  2. Brush with melted butter. Bake at 200 degrees C for 15 minutes turning once. Add mushrooms to chicken.
  3. Stir together tomato sauce, chutney, worcestershire sauce and soy sauce. Pour over chicken and mushrooms. Bake, basting a couple of times for about 10 minutes more.
  4. Meanwhile cook fettuccine to packet instructions. Serve chicken over fettuccine, top with tomatoes.

Tasty and simple. Easy to bake, not much clean up in the kitchen, unlike conventional schnitzel. - 21 Aug 2011

This was tasty.. and no kidding it is spicy. Next time I will reduce the spices as they were a bit much for me. I found the baking time after adding the mushrooms to be a bit too short... needed really 20 minutes to get them cooked. I also thought this needed more sauce so I doubled it.. especially if you are serving this over pasta - 13 May 2013
