Ingredients
Serves: 6
- 2 cups grated zucchini
- 2 cups grated sweet potato
- 1 finely chopped onion
- 1 1/2 litres chicken stock
- 1 level tablsp. Thai curry paste
- 1 cup coconut milk

- Soften onion in a little Olive Oil in large pot.
- Add curry and heat until fragrant
- Add stock and vegies and bring to boil, then simmer until soft - approx 30 mins.
- Remove from heat and add Coconut milk, stir to combine.
- Blend in batches until smooth, then reheat.
- Serve in bowls, garnished with a sprig of Coriander or Mint.
