Cold Weather Soup

    A spicy soup to warm the heart in winter, yet still enjoyable anytime.

    Ingredients
    Serves: 6 

    • 2 cups grated zucchini
    • 2 cups grated sweet potato
    • 1 finely chopped onion
    • 1 1/2 litres chicken stock
    • 1 level tablsp. Thai curry paste
    • 1 cup coconut milk

    Directions
    Preparation:20min  ›  Cook:30min  ›  Ready in:50min 

    1. Soften onion in a little Olive Oil in large pot.
    2. Add curry and heat until fragrant
    3. Add stock and vegies and bring to boil, then simmer until soft - approx 30 mins.
    4. Remove from heat and add Coconut milk, stir to combine.
    5. Blend in batches until smooth, then reheat.
    6. Serve in bowls, garnished with a sprig of Coriander or Mint.

    Great soup. No need to grate anything. Doubled the ingredients Then just chopped everything put it the pressure cooker then blitzed in the processor with the coconut milk.  -  07 May 2016  (Review from Allrecipes UK & Ireland)
