    Ingredients
    Serves: 2 

    • 2 onions finely chopped
    • 2 carrots finely chopped
    • 6 cloves of garlic
    • 2 teaspoons ground ginger
    • 2 tablespoons cumin
    • 1 teaspoon ground cardamom seeds
    • 1 cup lentils - soaked overnight
    • 4 cups chicken stock
    • 2 cups mixture of freshly chopped basil, mint & coriander

    Directions
    Preparation:20min  ›  Cook:1hour  ›  Ready in:1hour20min 

    1. Cook onions, carrot and garlic for 3 minutes
    2. Then add ginger, cumin and cardamom and cook for further 2 minutes
    3. Add the lentils and stock, simmer for 1 hour or until mixture reduces to a thickish consistency
    4. Finally stir in chopped herbs

    Other ideas

    for a winter soup add a little more stock and do not reduce as much.
