Quick and Easy Potato and Zucchini

    A simple but elegant meal - one of our favourites! We usually serve this with lightly friend green beans with salt and a fresh salad. Our salad consisted of tomatoes, mint, parsley, grapes, cherry tomatoes and chilli all from our garden!

    Serves: 2 

    • 1 cup rice
    • 1 zucchini
    • 1 potato
    • 4 sprigs rosemary
    • 2 sprigs thyme
    • 4 garlic cloves
    • 1 bunch coriander
    • 2 teaspoons cumin
    • salt, to taste

    Preparation:5min  ›  Cook:15min  ›  Ready in:20min 

    1. Cook 1 cup of rice.
    2. Cut zuchinni and potato into circular slices and place in a saucepan, add 2 cups of water and set to boil.
    3. Add garlic, rosemary and thyme to the boiling water.
    4. Once the water has boiled away and the potato is cooked add salt and cumin powder.
    5. Crush the coriander in a blender and add to the saucepan. Mix through and serve!
