Low-Fat Non-Dairy Cream of Celery Soup

    A non dairy cream of celery soup that has virtually NO calories at all!!!

    Serves: 4 

    • 1 bunch celery
    • 1 Large potato
    • 1 onion
    • 1/2 Teaspoon celery salt
    • 6 Cups chicken stock
    • 1 Tablespoon oil

    Preparation:10min  ›  Cook:30min  ›  Ready in:40min 

    1. Dice up onion, potato and celery
    2. Saute onion and potato in the oil for about 3 mins, or until onion has gone a little transparent
    3. Add chicken stock and bring to the boil
    4. Once boiling add the celery, Bring back to the boil and lower heat. Add celery salt (If you do not have it just use normal salt!)
    5. Let it simmer for around 30 mins.
    6. Blend the soup until creamy consistency
    7. ENJOY!!!

    Hi Reggie, this recipe looks great and I intend to try it! About your review of my chocolate cake recipe. All ovens are different so if it wasn't cooked after an hour, I suggest you leave it in the oven until it is cooked! I test with a skewer and if it comes out clean, then it's cooked. You may have the cake too high in the oven, so lower the shelf. Must be at 180C. Cheers - Wenya  -  19 Mar 2010
