Easy Easter Bunny Cake

This cake makes a fun centrepiece for Easter lunch or dinner. Watch this recipe being made in the Allrecipes Easter Bunny Cake Video.

Serves: 8 

  • 1 pre-made round sponge cake
  • white icing to cover the top and sides of the cake
  • 1 small bag jelly beans
  • black licorice for whiskers
  • 250g desiccated coconut
  • 4 drops green food colouring

  1. Cut the cake in half, ice one of the flat sides, then sandwich the two sides together.
  2. Stand the cut edge of the cake on a cutting board, and cut a wedge out to make the bunny's neck.
  3. Place that cut out wedge onto the back of the cake. This forms the tail.
  4. Ice the whole cake then cover it with enough desiccated coconut to cover. (You'll need about a cup of coconut later to colour.)
  5. Stick jelly beans in the icing for the eyes and nose and add licorice for the whiskers.
  6. Cut ears out of pink cardboard and fold down the middle. Push into cake.
  7. Put 1 cup of coconut in a bowl and add 4 drops of green food colouring. Mix this all together well until all the coconut is green.
  8. Sprinkle the green coconut around the bunny cake to make grass and dot it with jelly beans. Enjoy!
