Quick and Easy Chicken Curry

    This is a light and healthy chicken curry which is easy to prepare. You can make it as mild or spicy as you like by adding or taking away the hot chilli powder.

    Serves: 4 

    • 500g chicken- thigh or breast pieces
    • 1 tsp ground turmeric
    • 2 tsp garam masala
    • 1/2 tsp chilli powder
    • 1 tsp mild paprika
    • 2 tsp tomato paste
    • 1 tbs chopped coriander (optional)
    • 1/3 cup full-fat or low-fat yoghurt
    • 500ml + 2 tsp warm water
    • 1 clove crushed garlic
    • 2 tsp vegetable oil ( peanut or grapeseed ideally)

    1. Cut chicken into bite size pieces.
    2. Make curry paste by mixing chilli powder, turmeric, garam masala, paprika with 2 teaspoons hot water and one tablespoon tomato paste.
    3. Add curry paste to pot with two teaspoons peanut oil and garlic. Cook for three minutes on low heat.
    4. Add chicken to pan. Brown chicken for 5-7 minutes.
    5. Add 500 mL warm water to pot. Cover pot and bring to the boil. Then reduce heat and simmer gently for thirty to forty minutes.
    6. Turn off heat. Stir in yoghurt and coriander.
    7. Serve with boiled rice and vegetable side dishes.

    Make it healthier

    Use low-fat yogurt.

    Yes this was an easy & quick curry chicken - will do it again. I also added approx. 1/2 tsp. cornflour (just in case there was too much liquid), but it probably didn't require it as the liquid reduced more than half.  -  01 Mar 2015
