Slow cooker coconut rice pudding

    A fabulous rice pudding with sultanas and coconut milk cooked in a slow cooker. These milk amounts are for four people.

    Serves: 4 

    • 1-2 handfuls per person of rice (use the rice of your choice)
    • 1 tin (400ml) coconut milk
    • 1 small tin (185ml) evaporated milk (normal milk will do for low fat)
    • 1 good handful sultanas or any dried fruit (optional)

    1. Add one to two handfuls of rice per person to the slow cooker. For four people add 1 tin of coconut milk, one small tin of evaporated milk, or a small cup of milk. Add a handful of sultanas if you like that sort of thing!
    2. Cook in slow cooker for 4 hours on low, until tender and bubbly :)
