    Minced chicken with mushroom, tomato and sour cream; I like to serve this with curly fettuccine

    Serves: 4 

    • 500gm minced chicken
    • 250gm small champignons finely chopped
    • 6 spring onions finely chopped (green and white separated)
    • 3 medium tomatoes, peeled, and deseeded then chopped
    • 500gm lite sour cream
    • 100ml dry white wine
    • 2tbspn olive oil
    • 1tsp dried oregano

    Preparation:30min  ›  Cook:20min  ›  Ready in:50min 

    1. Heat a large fry pan or saucepan, add oil then add the chicken mince, add the oregano.
    2. When the chicken is cooked - about 10 mins - add the champignons, spring onions, tomatoes and white wine. Season to taste. Add sour cream, stir through, simmer for about 10 minutes.
    3. Cook pasta in lots of boiling, salted water until al dente, drain. Serve pasta in a bowl and top with the chicken mince and sprinkle with finely chopped parsley and shaved Parmesan.
