    Lovely moist chocolate brownies with zucchini for additional flavour and texture. You be amazed at the difference.

    Ingredients
    Serves: 24 

    • 1/2 cup (125 ml) vegetable oil
    • 1 1/2 cups (330g) white sugar
    • 2 teaspoons vanilla essence
    • 2 cups (250g) plain flour
    • 1/2 cup (60g) unsweetened cocoa powder
    • 1 1/2 teaspoons baking soda
    • 1 teaspoon salt
    • 2 cups grated zucchini (about 2 medium zucchinis)
    • 1/2 cup (60g) chopped walnuts
    • For the icing
    • 6 tablespoons (45g) unsweetened cocoa powder
    • 65g margarine or butter
    • 2 cups icing sugar
    • 1/4 cup (65ml) milk
    • 1/2 teaspoon vanilla

    Directions

    1. Preheat oven to 180 degrees C. Grease and flour a 23x33cm baking dish.
    2. In a large bowl, mix together the oil, sugar and 2 teaspoons vanilla until well blended. Combine the flour, 1/2 cup cocoa, baking soda and salt; stir into the sugar mixture. Fold in the zucchini and walnuts. Spread evenly into the prepared dish.
    3. Bake for 25 to 30 minutes in the preheated oven, until brownies spring back when gently touched.
    4. To make the icing, melt together the 6 tablespoons of cocoa and margarine; set aside to cool. In a medium bowl, blend together the icing sugar, milk and 1/2 teaspoon vanilla. Stir in the cocoa mixture. Spread over the cooled brownies before cutting into squares.

    Oh Yum! We ALL loved them (hubby, me and our daughters which are sometimes picky). I reduced the sugar to one cup, didn't add nuts, and didn't bother with the icing. They worked well with half oil, half apple sauce. These brownies were not crunchy on the outside and gooey on the inside, but a nice chocolaty treat. They freeze well and defrost nicely in the children's lunchboxes. I packed my zucchini fairly well when I measured them, and put them in with the oil/sugar mixture and had no problem whatsoever with my batter. I'm about to go share that recipe with friends now. Thank you! Using full sugar would make those more brownie-like I believe. - 31 Aug 2010

    Easy and yummy chocolate cake. I added choc protein powder to add healthyness and white choc chips to distract the eye from the white/green zucchini bits. I didn't bother icing it or adding walnuts. - 03 Jan 2014

    Awesome treat. I didn't bother with the icing, didn't think they needed it. And you could do away with the walnuts if you didn't have them. Easy to make, was a bit worried because the mixture was quite dry initially but after a little while (waiting for the oven to heat up!) you could see the moisture coming from the zucchinis. - 24 Nov 2013
