200g dark cooking chocolate
2 tablespoons water
2 tablespoons rum
1/3 cup castor sugar
2 egg whites
1 cup cream

Melt chocolate with rum and water in a saucepan over hot water.
Add sugar, blend and cool.
Whip egg white until stiff.
Semi-whip the cream.
Whip the chocolate mixture then gently fold in cream and then gently fold in cream and lastly egg white.
Serving suggestion
Pour into 6 serving dishes. Or serve in a large bowl.
