Ingredients
Serves : 2
- 750g chicken breast
- 1 onion sliced
- 1 clove garlic chopped
- 2 tablespoons medium curry powder
- 1 teaspoon turmeric
- 2 teaspoons cumin
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1 teaspoon pepper
- 1 tablespoon finely chopped/grated ginger
- 1 large potato diced
- 2 carrots peeled and sliced
- 1 fresh chilli sliced
- 1 stalk lemongrass sliced
- 2 x 270g cans of light coconut milk
- 1 can water (use the coconut milk can)
- 2 kaffir lime leaves sliced (optional)
- cooking oil spray
Directions
Preparation:15min › Cook:9hours › Ready in:9hours15min
- Trim chicken and cut in 2cm chunks. Brown onion and garlic in a non-stick pan using some oil spray.
- Mix all dry spices together. Place all ingredients into the slow cooker. Mix well. Cook on low for 9 hours.
- Garnish with fresh coriander and serve with rice and chutney.

this curry was nice, but not as good as I was expecting. Enjoyed the distinctive lemongrass flavour, however wouldn't slice it next time as chewing on it wasn't very plesant, will put in whole and remove at end of cooking. - 26 Apr 2011

I agree re lemongrass, there was too much liquid (I thought there may be when I put the extra water in) had to thicken with cornflour. But tasty and will try again without the water and see how it goes - 29 Jul 2012

This is a great tasting dish that everyone enjoyed. The chilli was left out. This is now in my favourites book. - 14 Aug 2011
