A recipe that will move your guacamole standards up a notch. The flavour and texture of the mango gives it a fine touch and makes it the favourite of everybody. It is not only delicious, but colourful and definitely Mexican. Try it!
4 ripe avocados, peeled and seeded
4 limes, juiced
2 jalapeno or green chillies (or 2 taste)
4 tablespoons chopped coriander
2 tablespoons white onion, finely chopped
1 mango, diced
salt to taste

Mix chopped onion and 1/2 of the lime juice in a small bowl. Let the onion soak for no less than 1 hour. When ready, discard the lime juice.
Grind the peppers with the remaining lime juice and salt to taste in a food processor. Add the avocado and mix well until creamy and smooth.
Transfer mixture into a serving bowl and mix in soaked onion, cilantro and mango.
Serve at room temperature with plain corn chips. Irresistible!
