Hot cross buns with cardamom and cherries

Infused with cardamom, these taste as wonderful as they smell. These buns are requested by family and friends every Easter and you can make the dough in your bread machine.

Serves: 12 

  • 1 sachet (7g) dried yeast
  • 60ml warm water
  • 525g plain flour
  • ¼ teaspoon salt
  • 100g caster sugar
  • 1 teaspoon ground cardamom
  • 300ml lukewarm milk
  • 125g butter melted
  • 1 egg
  • 40g sultanas
  • 40g mixed peel
  • 40g dried cherries or cranberries (optional)
  • 75g plain flour
  • 1/2 cup water

  1. Sprinkle the yeast over the warm water and let stand until dissolved, about 5 minutes. Place the flour, salt, sugar, cardamom, 300ml of milk, butter and egg into the bread machine. Pour the yeast mixture on top. Close the lid and set the machine for the Dough setting and press Start. Add the dried fruit at the beep.
  2. When the dough has finished, divide into 12 portions and shape into balls. Place them into a greased 22x33cm baking tray. Cover with plastic wrap and set aside to rise until doubled in size, about 45 minutes.
  3. Preheat the oven to 180 degrees C. Mix the flour and water to a paste. Remove the plastic wrap from the buns and pipe crosses on the top of each bun. Bake in the preheated oven until golden brown, 20 to 25 minutes.

Altered ingredient amounts. Needed lots more flour than listed to turn it into a dough rather than cake batter. Also milk is not listed in the ingredients so i substituted the 300ml water with milk. I suggest using food processor or kneading by hand to work out how much flour to use before bread machine! - 10 Mar 2010
