Chocolate Chip Banana Pancakes

    And why not have everything in one pancake? These have chocolate chips, bananas and pecans or walnuts.

    Serves: 9 

    • 1 cup (125g) plain flour
    • 2 teaspoons baking powder
    • 1 teaspoon bicarb soda
    • 1/4 teaspoon salt
    • 3/4 cup (190ml) skim milk
    • 3 tablespoons (60g) butter (melted)
    • 2 eggs
    • 1 tablespoon white sugar
    • 1 teaspoon vanilla essence
    • 1 large banana diced
    • 1/2 cup small dark choc chips (choc bits)
    • 30g choped pecans or walnuts

    1. Combine flour, baking powder, bicarb soda, and salt in a large bowl. Set bowl aside. In a separate bowl, whisk together the skim milk, melted butter, eggs, sugar, and vanilla. Make a well in the centre of the dry ingredients and stir in the wet ingredients, being careful not to over mix the batter.
    2. Gently fold in the banana, chocolate chips, and nuts.
    3. Heat a large frypan over medium heat, and coat with cooking spray. Pour 1/4 cupfuls of batter onto the frypan, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.

    These were great, probably would make again for the kids but not my husband and I. My youngest inhaled this but my husband and I thought they were a bit rich. I liked the combination of the banana and pecans, just thought the chocolate took it over the top. I did follow another reviewers advice and add another small chopped banana and used buttermilk.     These were amazing! I made these for breakfast this morning. My kids inhaled them! Even my neighbors son came in and devoured 2. I didn't change a thing. They are perfect as is. I have been looking for a good banana pancake recipe and my hubby has been looking for a choc chip pancake recipe and this is perfect!
