    This is so easy and such a great pumpkin dish. Fine either hot or cold. I use Jap or Qld blue pumpkin for this cos I think they have the best taste.

    Ingredients
    Serves: 4 

    • 500g pumpkin, peeled and cubed
    • 2 tablespoons soy sauce
    • 1 tablespoon mirin
    • 1/2 lime, juiced
    • 1 tablespoon grated or chopped fresh ginger
    • squeeze of chilli sauce or a little chilli paste
    • handful basil, chopped

    Directions
    Preparation:15min  ›  Cook:15min  ›  Ready in:30min 

    1. Mix together the soy sauce, mirin, lime, ginger and chilli.
    2. Steam the chopped pumpkin till soft but still holds its shape-about 15 minutes, depends on the size of your cubes.
    3. Mix them all together and serve warm.
