Gran's Zucchini and Poppyseed Muffins

Ingredients
Makes: 12 muffins
- 1 cup wholemeal self-raising flour
- 1 cup plain self-raising flour
- 1/2 cup bran
- 1/2 teaspoon bicarb soda
- 3/4 cup buttermilk
- 1/3 cup orange juice concentrate
- 2 eggs
- 1 cup grated zucchini
- 2 tablespoons poppyseeds

- Sift the dry ingredients into a bowl. Add poppyseeds to the zucchini and mix into the dry ingredients.
- Beat together egg, buttermilk and orange juice and pour into the mixture all at once. Mix till well combined but do not overmix.
- Spoon into greased muffin pans and bake at 180C for 20-25 minutes or until cooked (test with skewer)
