Bulghur with Dried Fruit

Very basic yet tasty side that goes well with roasted chicken or kebabs. Any type of dried fruit can be used, such as sultanas or dried apricots, but I prefer cranberries.

Ingredients
Serves: 2 

  • 1 cup (250ml) water
  • 60g bulghur wheat
  • 1 chicken stock cube
  • 1 teaspoon butter
  • 30g dried cranberries

Directions
Preparation:5min  ›  Cook:20min  ›  Ready in:25min 

  1. Bring water to a boil in a pot, and mix in bulghur, stock cube and butter. Cover pot, reduce heat and simmer 15 minutes.
  2. Fluff cooked bulghur with a fork, and gently mix in the dried cranberries.

It was so easy to make and so yummy. I added diced barbecued chicken right into the leftover bulgur and had a terrific lunch the next day. - 29 Sep 2008
