    This is an easy Christmas cake that keeps very well and is inexpensive to make. I make several each year and they are always enjoyed.

    Serves: 12 

    • 1kg mixed fruit
    • 250g mixed cherries
    • 125g butter
    • 3/4 cup brown sugar
    • 1tsp mixed spice
    • 1/2cup brandy or rum
    • 1/2cup orange juice
    • 2 tablespoons marmalade
    • 1cup plain four
    • 1cup SR flour
    • 2 large eggs

    Preparation:1hour  ›  Cook:2hours  ›  Ready in:3hours 

    1. Preheat the oven to 160 degrees C
    2. Line the base of a 20 cm cake tin with 2 layers of newspaper and line the bottom and sides with baking paper. The paper should come up higher than the top of the tin.
    3. Put fruit, butter, spice, sugar, liquid and marmalade into a large pan and heat till boiling. Simmer for 3 minutes.
    4. Cool completely
    5. Add eggs and flours fold into the mixture.
    6. Pour into the prepared tin. Bake in preheated oven for 2 hours.
