Easy Pumpkin Scones

    My sister gave me this recipe - its insanely easy with only two ingredients. I made these immmediately to try them and the result is more savoury than the normal pumpkin scone but they still go well with jam:-)

    Serves: 6 

    • 1 tin (420g) of cream of pumpkin soup
    • 3 cups (375g) self raising flour

    Preparation:15min  ›  Cook:12min  ›  Ready in:27min 

    1. Preheat oven to 200 degrees C.
    2. Sift the flour into a bowl and pour in the soup. Mix well - the dough will be quite sticky.
    3. Put the dough on a floured surface and press into a round shape about 2 cm thick.
    4. Cut the scones with a scone or biscuit cutter (or a floured glass:-) or cut into squares.
    5. Bake in preheated oven for 10-12 minutes.

    Beautiful.... So easy and yet they taste very professional!! Added a tbs of sugar because we like them a bit sweet, and some mashed baked pumpkin for extra fibre thanks for sharing this excellent recipe!  -  23 Sep 2011
