Christmas Brunch - Spicy Apple Muffins

    Our Christmas Brunch; Spicy Apple Muffins (recipe below), Banana-rama Muffins, medley of fruit and a European breakfast platter.

    • Spicy Apple Muffins
    • 100g butter, melted and cooled
    • 1/3 cup sugar
    • 1 60g egg, beaten lightly
    • 1/2 cup milk
    • 1cup self-raising flour
    • 1/2 tsp ground cinnamon
    • 1/4 tsp salt
    • 2 appples, cored and finely sliced
    • 1/4 cup sugar
    • 1/2 tsp ground cinnamon

    1. Butter 6 x 1/2 cup muffin tins, preferably non stick. preheat oven to hot 200C
    2. In a large bowl, combine melted butter, sugar, beaten egg andmilk. Sift in the flour, cinnamon and salt and stir gently until just combined. The mixture should be lumpy, not smooth. Spoon the mixture into the muffin tins until two/thirds full, and push the apple slices slightly into the tops. Combine the topping ingredients and sprinkle over the muffins. Bake in a preheated oven for 15-20 mins, or until they go light brown.
    3. Serve warm with whipped cream or ice-cream.

    Delicious warm spicy muffins with cream. A nice healthier alternative to mince pies. Great for a dessert too with icecream.  -  05 Jan 2010
