Pumpkin Scones

    These are easy and delicious! Make sure your pumpkin is cold though :) Learn from my error - if it is warm/hot it makes for a super sticky dough - still works out delicious though.

    Serves: 6 

    • 1 tablespoon butter
    • 1/2 cup caster sugar
    • 1 egg, beaten
    • 2 cups COLD mashed pumpkin
    • 2 cups self raising flour

    Preparation:30min  ›  Cook:15min  ›  Ready in:45min 

    1. Cream butter and sugar.
    2. Add egg and blend well.
    3. Add pumpkin and flour, mix into a soft dough. Roll out to a 2cm thickness. Cut into squares, or use a glass to make circles.
    4. Glaze with a milk/egg mixture if you want.
    5. Place on oven tray. Bake at 220 degrees C for 12-15 minutes.

    Used different ingredients. I added some shedded cheese, about half a cup. Just for something different! Taste great!  -  29 May 2010
