The most divine Scottish dessert. I received this recipe from my Mother-in-Law, who received it from her Mother-in-Law.

Serves: 4 

  • 285ml double cream
  • 1 tablespoon Whiskey or Drambuie
  • 2 tablespoons clear honey
  • 250 grams raspberries
  • 3 tablespoons pinhead oatmeal (see note)

Preparation:15min  ›  Cook:10min  ›  Ready in:25min 

  1. Slowly toast the oatmeal in a frypan and allow to cool
  2. Whip cream gently - not too thick. Gently fold in honey and whiskey or drambuie; fold in the oatmeal and raspberries.
  3. Chill in refrigerator until ready to serve.

Pinhead oatmeal substitutes

Use Oat Bran instead of Pinhead Oatmeal, or whizz rolled oats in a food processor.
