Kerry Greenwood's Plum Pudding Muffins

This recipe was found in the back of Kerry Greenwood's book "Earthly Delights".

Serves: 6 

  • 2 cups plain flour
  • 1/2 cup sugar
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons bicarb soda
  • 1 cup chopped glace peel, sultanas and dried fruit
  • 1 teaspoon cinnamon
  • pinch allspice
  • 1 egg, beaten
  • 2 tablespoons butter, melted
  • 1 cup milk
  • 1 tablespoon rum or brandy

Preparation:10min  ›  Cook:15min  ›  Extra time:5min  ›  Ready in:30min 

  1. Heat oven to 300 degrees C. Spray muffin tins with oil.
  2. Mix all the dry ingredients together in a large bowl. Mix the egg, butter, milk and alcohol together.
  3. Pour mix into dry ingredients, stir with a fork until just combined and spoon into muffin tins.
  4. Bake for 15 minutes until they smell cooked but before they burn on the bottom.
  5. Turn out to cool.
