Easy Champagne Risotto

Impress your guests with this easy risotto seasoned with a touch of champagne! Very elegant and tasty.


Serves: 6 

  • 500g arborio rice
  • 5 tablespoons (100ml) olive oil
  • 150ml Champagne
  • 1.2 litres stock
  • 4 tablespoons grated Parmesan cheese (about 100g)
  • 1 onion, finely chopped

Preparation:15min  ›  Cook:20min  ›  Ready in:35min 

  1. Saute the onion with a little oil in a nonstick pot.
  2. Add the rice and stir and let it cook long enough so that all grains are covered with oil.
  3. Add the champagne, stir and let it evaporate.
  4. Pour the hot stock in, bit by bit, stirring as you go.
  5. Cook for about 15 minutes.
  6. Once cooked, remove from heat, add plenty of parmesan and a knob of butter.
  7. Mix all this together over low heat a few minutes.
  8. Serve in bowls or in glasses.
