Spicy Chicken Spring Rolls

    This recipe has evolved from a traditional Vietnamese rice paper roll and has become a family favourite. Always keep a good supply of rice papers and vermicelli or noodles in the pantry and this recipe can be adapted to whatever meat and vege you have.

    Serves: 2 

    • 1/5 kg chicken thigh fillets
    • 1 onion sliced Chinese style
    • olive oil and sesame oil for cooking
    • vermicelli/rice stick
    • bok choy, blanched
    • carrot, grated
    • kale or spinach sautéed lightly
    • Vietnamese mint, spearmint and lime quarters for garnish
    • sweet chilli sauce and soy sauce for dipping
    • crushed nuts
    • rice paper wraps
    • Chilli Sauce Ingredients
    • chillies (bird’s eye)
    • garlic
    • ginger/galangal
    • lime juice
    • fish sauce
    • palm sugar
    • water
    • Marinade ingredients
    • 3 tablespoons oyster sauce
    • 1 tablespoon soy sauce
    • 1 tablespoon fish sauce
    • 1 teaspoon bicarb soda
    • 3 tablespoons Chinese rice wine
    • 1 tablespoon honey
    • 1 teaspoon chilli powder
    • 1 teaspoon garlic powder
    • 1 teaspoon sesame oil

    1. Combine marinade ingredients and add thickly sliced lean chicken, mix well and refrigerate for several hours or preferably overnight.
    2. Remove chicken from marinade and stir fry quickly with sliced onion in a little olive oil and sesame oil in a very hot wok or frying pan.
    3. Cook noodles as per packet instructions.
    4. Blanch bok choy, sauté kale, grate carrot.
    5. Arrange all ingredients on a serving platter and decorate with mints and quartered lime.
    6. Chilli Sauce – Place chopped garlic, ginger and chillies in a mortar and pound to a pulp, add sugar and other ingredients to taste and mix well.
    7. Serve platter with dipping sauces and bowls of hot water.
    8. Dip rice paper into hot water until soft, add a little of each ingredient to middle of rice paper, sprinkle with crushed nuts, chilli sauce and mint.
    9. Roll rice paper like an envelope to enclose ingredients, dip into sauce of choice and enjoy!

    This is a hands on for all the family type of dish making it heaps of fun. I recommend it to bring your family closer together as talking and laughter is an essential ingredient of this recipe.  -  17 Dec 2009
