Green Mango Salad

Im always looking for green mango recipes cos of our old mango tree. This is like kind of green pawpaw salad. Make sure you slice the mango fine.

Ingredients
Serves: 3
- 2 green mangoes
- 4 white stems of spring onions chopped
- 2 cloves garlic, sliced
- 1 tablespoon sugar
- 1 lime, juiced
- 2 tablespoons fish sauce
- 1 tablespoon sesame oil or peanut oil
- salt and pepper to taste
- 30g roasted peanuts crushed
- I small red chilli seeded and chopped

- Cut green mango into long thin shreds (julienne) or grate with the large side of the grater. Fry the garlic and onion till golden and set aside.
- Mix together the sugar, lime juice, fish sauce, oil and salt and pepper to taste. Stir till the sugar's dissolved. Add in the peanuts and chilli.
- Add the dressing to the mango and stir it in well to serve.
