Easy Xmas cake

    Its easy, I've been making it for nearly forty years. I change it by adding spices or nuts Can be iced.

    Serves: 50 

    • I½ cups ginger ale
    • 1½ kg dried fruit mix
    • 300g butter
    • 1½ cups sugar (brown or white)
    • 6 eggs (beaten)
    • 4½ cups flour
    • 1½ teaspoons baking powder
    • 1½ tablespoons (or so) brandy or (sherry or whisky or essence)

    Preparation:30min  ›  Cook:4hours  ›  Extra time:30min  ›  Ready in:5hours 

    1. Bring fruit mix to the boil in ginger ale for a minutes or so
    2. Coool a little then add butter and beat it in when melted. Cool a little more and add sugar and beat / stir. Cool till nearly cold
    3. When nearly cold, add the brandy, sherry, whisky or essence
    4. Add beaten eggs alternately with sifted flour.
    5. Spoon into prepared baking tin
    6. Decorate with nuts/ cherries if you wish
    7. Bake 2 hours at 160º C; then for 2 hours at 140º C
    8. Check with skewer.
